Slightly off-dry sherry. Wine of biological aging under yeast called “velo de flor” that, in a second stage, goes through oxidative aging. 100% palomino variety. It is made by the traditional system of criaderas and soleras in American oak cask, and has an average age of 7 years.
Fernando de Castilla Classic Amontillado is a wonderful example of the famous, rich, amber coloured style of Sherry. It is just off dry (2g/l residual sugar) and packed with nutty, dried fruit aromas. It is an intense and complex drink with great freshness and a plump mouth sensation that finishes dry.
