This is a fantastic sparkling wine from north east Spain, made with grapes usually associated with Cava.
Raventos Blanc de Blancs is crafted mainly from Xarel·lo, Macabeo and Parellada, all hand-picked and fermented with native yeasts before undergoing bottle fermentation and ageing for around 18 months on the lees. Fresh citrus, white flowers and mineral notes lead to a fine, elegant mousse and vibrant acidity. It pairs beautifully with seafood, tapas, salads or as a refined aperitif.
