Citrus, chamomile, fresh herbs, fennel, and white fruit notes give this medium-bodied, complex island white a terrific sense of freshness. At bottling, wines are produced with little interference and little sulphur. The wine is mostly fermented in stainless steel tanks with 20% in 500l French oak barrels.
The wine is clarified with bentonite before being bottled following five months of ageing on the lees and three months of stirring in barrels.
Since every bottle at this garage winery is sold every vintage, production must be extremely limited.
