
This wine from Yann and Cristela is made from 100% Pinot Noir grapes sourced from a number of plots that Yann manages.
The name doesn't arise from a vineyard or area where the grapes come from but rather from the fact that Yann thinks that the wine is as fine and sharp as a "gouzotte", a sharp hooked knife commonly used in the vineyard for pruning.
The wine was made with a reasonably long maceration but aged in vats to maintain the freshness and vibrancy of the wine.
The Domaine Recrue de Sens is not pruned, and all the vines are intertwined to create bridges between the vineyards. Yann wants to limit or stop the use of copper, also for this uses herbal preparation and decoctions to treat. Yann Durieux spends a lot of time observing the vineyard, doing research to find the right solutions. This balance and reinforcement of the plant allows Yann Durieux to work more serenely in the cellar.
